How We Make Our Small-Batch Jams at Oregon Hill

There's a version of jam that comes off an assembly line, thousands of identical jars rolling through a facility the size of an airport hangar, made from fruit concentrate, corn syrup, and ingredients you need a chemistry degree to pronounce.


That's not what we do.


At Oregon Hill, we make jam the way it was always meant to be made — in small batches, with real fruit, and with the kind of attention that only comes from actually caring about what goes into the jar. It takes longer. It costs more. And honestly? We wouldn't have it any other way.




It Starts With the Fruit

Everything we make begins with Pacific Northwest fruit — and if you've never tasted a berry grown in this corner of the world, you're most certainly missing out. The combination of rich volcanic soil, cool nights, and long summer days produces fruit with a depth of flavor that's genuinely hard to replicate anywhere else.


Take the marionberry. Developed right here in Oregon in the 1940s, it's earthier than a blackberry, more complex, tart up front, sweet at the finish, with a richness that holds up beautifully when cooked down into jam. We source ours from local growers who know this fruit the way we do: personally.


The same philosophy applies across everything we make. Local strawberries for our strawberry jam. Pacific Northwest marionberries for our Seedless Marionberry jam. Ingredients you can trace back to a real place, not some anonymous supplier halfway across the country.



What small batch means to us

I get asked sometimes — what does "small batch" actually mean? It's a fair question. The term gets thrown around a lot on the marketing side of food manufacturing, often without much meaning behind it.


For us it means two things. First, we make less at a time. Each batch gets our full attention. No cutting corners, no rushing the process to hit some production quota. Second, it means we can actually taste what we're making. Every batch gets checked. Every jar that leaves our St. Helens facility meets the same standard.


When you scale up to industrial production, you lose that. You're trusting machines and processes instead of people and palates. At Oregon Hill, we're not interested in making that trade-off.



The Cooking Process

Good jam isn't complicated, it is however precise. Fruit, sugar, and heat, balanced exactly right. Cook it too fast and you lose the bright, fresh flavor of the fruit. Cook it too slow and you lose the texture. There's a window where everything comes together, where the fruit breaks down just enough, where the natural pectin activates, where the color deepens and the aroma fills the room. That's the moment we're chasing every time.


It's the kind of thing you learn by doing it over and over again, until it becomes instinct. Our team at Oregon Hill has that instinct. You can taste it.



From the kettle to Your Table

Once a batch is ready, it goes straight into the jar, sealed and labeled. We wait until the temperature comes down before boxing everything up, ensuring there's no moisture trapped inside that could affect the seal or quality of the jam.


What you get when you open a jar of Oregon Hill jam is as close to the moment it was made as we can possibly get it to you. That first smell when the lid pops, that's real Pacific Northwest fruit, cooked with care, doing exactly what it's supposed to do.


That's what small batch means to us. Not a gimmick or marketing phrase. Just the way we've always made our jams, and always will.
